About the Chef: Ciaran Tedford
Chef Ciaran's food is rooted in local, seasonal produce, inspired by the rich bounty of West Cork - from Gubbeen cheese to Skeganore Duck - and shaped by international influences and classical cookery. His travels through Asia have also left a lasting mark, bringing bold, vibrant flavours into his cooking and broadening his creativity.
With over 20 years experience, Chef Ciaran trained in L.I.T and learned his craft in Irish kitchens including Parknasilla and teh Michelin Bib Gourmand-winning 1826 Adare under Wade Murphy, shaping his early career with precision & drive.
His career then took him to Melbourne, Australia, where he he led kitchens in casual fine dining, beachside gastropubs, and alpine resorts along with a few stages in hatted kitchens.
Back in Ireland, he brought global flair to Mikey Ryan's at Cashel Palace, which was named Best Gastropub in Ireland 2023 and featured in Food & Wine Ireland's top 101 Restaurants in 2024. He later joined the O'Donoghue Ring Collection in Killarney as Executive Sous Chef.
